Kookoo Adas Recipe
Ingredients
- 2 cups brown lentils
- 1 Large onion
- 3 Garlic cloves
- 1 egg
- 50 g Fresh parsley
- 1 cup Toasted flour
- 4 tbsp olive oil
- 4 tbsp Vegetable oil
Seasonings
- 2 tsp Salt
- 1 tsp Black Pepper
- 1 tsp Turmeric
Step 1: Prepare the Lentils
Begin by adding the brown lentils into the pot. Add about a tablespoon full of salt with about four cups of water. Place the pot on medium heat and let its contents boil for approximately one hour, ensuring that the lentils are soft.
Step 2: Chop the Onion
While cooking the lentils, take a big onion, peel it, and chop finely before cooking the lentils.
Step 3: Grate the Garlic
Take 3 cloves of garlic and grate them finely. The grated garlic will be better distributed and its taste compounded.
Step 4: Prepare the Parsley
Fresh parsley should be used, after which you have to rinse it using cold water and pat dry with a clean piece of cloth. Then, chop finely and use it in this dish. Fresh parsley is an acceptable substitute, generally adding color and a pop of herbaceous flavor to the meal.
Step 5: Sauté the Onion
Put a pan with an approximate medium heat and pour 4 tablespoons of olive oil. After a while, add the chopped onions. Sauté the onions about 5 minutes until they get a golden hue and become tender.
Step 6: Strain the Lentils
Cook the lentil for one hour. After, pour tenderly into a strainer to get rid of excess water. Just allow the pulse to cool slightly.
Step 7: Mix the Ingredients
The cooled lentils are to be added into this large mixing bowl along with the sautéed onions, grated garlic, chopped parsley, 1 teaspoon of salt, black pepper, and turmeric. Crack in 1 egg and add 1 cup of toasted breadcrumbs into this mixture, whisking to have a smooth mixture.
Step 8: Heat the Pan
Put another frying pan on moderate flame, adding in 4 tablespoons of vegetable oil to it, and let the oil get hot to fry the Kookoo Adas.
Step 9: Form the Patties
Once the oil is hot, use a spoon to scoop some of the lentil mixture into the pan. Flatten it gently with the back of the spoon to form a patty shape. Be careful not to overcrowd the pan.
Step 10: Fry the Kookoo Adas
Cook every patty for about 5 to 7 minutes on one side. Then carefully flip it over and fry the other side another 5 to 7 minutes until it browns well and becomes crispy.
Step 11: Drain the Oil
Finally, as the Kookoo Adas finishes frying, transfer it onto a plate that is lined with some of the paper towels, which will help in draining any excess oil and, by extension, ultimately make your patties less greasy.
Step 12: Serve
Serve the hot patties warm once all are fried and drained. This can be served with bread or by itself as a side dish.
