Just like Kookoo Loobia Sabz, Kookoo Morgh is another Iranian traditional main dish that is prepared with chicken. Kookoo Sibzamini is the other Iranian traditional main dish that thrives on the use of potatoes as the main ingredient.

Kookoo Loobia Sabz Recipe

Ingredients

  • 1 Large potato
  • 1 Large onion
  • 500 g Green beans
  • 4 Eggs
  • 1.5 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Turmeric
  • 2 tbsp Vegetable oil

Step 1: Prepare the Green Beans

Start by washing the green beans under running cold water. After washing, cut into approximately 2 cm (about 0.8 inches) pieces with a sharp knife and set aside for later use.

Step 2: Blanch the Green Beans

Put the a glass of water in a saucepan and put over moderate fire. After reaching the rolling boiling point, introduce the cut green beans into it. Allow the green beans to cook through until when the water has totally drained, showing that in effect, they have been blanched. Drain the water, and what is left in the saucepan shall be the green beans.

Step 3: Prep the Potato

Take one big potato and peel the same very carefully. Wash the potato with the running cold water tap. After washing, dry the potato with the help of the clean kitchen cloth. Peel the potato and cut it into small cubes, around 1 cm in size.

Step 4: Fry the Potato

Take a frying pan, put it over the stove, two tablespoons of vegetable oil, and place it over medium heat. Once it is hot, put the finely diced potatoes very carefully in the pan. Fry them until they are done and formed a crust, which is golden brown in coloration. Once done, remove the potatoes from the pan and set them aside on a plate to cool.

Step 5: Sauté the Onion

One large chopped finely onion. To the same frying pan where we fried the potatoes, add another tablespoon of oil. Once the oil is hot, add the finely chopped onion into the pan. Sauté the onions for about five minutes until the onions turn translucent and slightly golden.

Step 6: Mix the Base

In a large mixing bowl, combine the seasoned onions, fried potatoes, and blanched green beans. This forms the vegetable base for your Kookoo.

Step 7: Add Eggs and Seasonings

Then, 4 eggs are broken into the mixture of the prepared vegetables, added with 1.5 teaspoons of salt, 1 teaspoon of black pepper, and 1 teaspoon of turmeric to the same bowl that already had the eggs in it.

Step 8: Combine Ingredients

Stir carefully, but at the same time, make sure that all ingredients combine well together with the help of a spatula or large spoon, paying special attention to the equal distribution of eggs in the vegetable mixture.

Step 9: Cook the Kookoo

Place a clean frying pan on the stove at medium heat. Add the remaining vegetable oil in the frying pan. When the oil is hot, pour the mixture onto the pan, spreading the egg and vegetables lightly with a spatula.

Step 10: Let It Set

Turn the heat to low, cover with a lid, and let the Kookoo cook undisturbed for about 15 minutes. This slow cooking process helps the Kookoo get perfectly set; it also develops a nice crust on the bottom.

Step 11: Flip the Kookoo

After the first 15 minutes of cooking, open the pot and check the kookoo. Turn the kookoo to the other side with the spatula. This kookoo can be presented on the dining table by cutting it into wedges or squares and serving it with sabzi as a side dish to flatbread or lavash.

Step 12: Final Cook

Now turn the kookoo the other way up and cover the pan, letting it cook for another 15 minutes over a low flame. This will help even cooking of the kookoo and browning of the other side.

Step 13: Serve

When fully cooked, transfer the kookoo out of the pan and cut into either wedges or squares. Kookoo Loobia Sabz is served hot, preferably with fresh bread on the side, or can be served hot as part of the main course meal.

Optional Step for Adding Chicken

If you choose to include chicken in your Kookoo Loobia Sabz, begin by placing a boneless chicken breast in a pot. Next, add the chopped onion and two cups of water to the pot; put over medium heat with a pinch of turmeric and a little salt for seasoning. Cook for about 45 minutes in order for the chicken to cook thoroughly and become tender, stirring from time to time.

Remove the cooked chicken from the pot and leave it to cool. Finely chop the cooked chicken. Add this to the bowl containing the vegetable and egg mixture, and follow from Step 6. Continue from Step 7 as is.
